Chicken Tamale Casserole

This recipe was introduced to me by Linda, mother-in-law extraordinaire.
It has now become a meal that Chad and I like to have a few times a month. One, because its AMAZING, two, because it is HEALTHY/Low Fat and three, because it is EASY!

FYI: I use green enchilada sauce instead of red and I use whole corn rather than creamed corn. I haven't tried it the original way, this was just the way Linda introduced it to me.

Happy Birthday Regan!

Happy Birthday to our cute sister Regan!
Regan is a fantastic cook and a talented baker. Her favorite color is green and her favorite food is chili and corn bread. Regan is currentley going to school to be an insurance producer so she can help take over her dad's Farmer's Insurance Agency. Regan is a mother to one cute little boy, Riley, and two boxers, Lula and Leo. Regan likes to teach dance, bake creative cakes, camp, hike and just be outdoors.
She is a military wife, aka, "back bone of the entire marine corp" :)
She and Mike plan on building a home in Moab in the near future, and have a lot of exciting things coming up for them.
We love you Ra Ra!

Cute Easter Idea!!

Let your little ones plant a few jelly beans in your garden the night before Easter, and.....
Show them what grew the next morning! Cute huh!?

Twice Baked Potatoes

Recipe:
5 Lg. Russet Potatoes
10 slices of crisped/diced Bacon (thick slices are best!)
1 cup of Sour Cream
6 tbsp Butter (real butter)
1/2 cup of Milk
1 cup of shredded Cheese, divided
2-4 Tbsp of chives (depending on how much you like
Scrub and rinse potatoes well.
Grease lightly with butter or oil, and pierce with a fork two or three times.
Wrap in tin foil, and bake in a 400° oven for about 1 hour.
Remove potatoes from oven.
When cool enough to handle, split potatoes lengthwise and carefully scoop out potato into a bowl, leaving the skins intact.
Add all ingredients except for 1/2 of the cheese (you can be naughty and add all of the cheese, then some extra on top :).
Refill potato skins.
Sprinkle with other half of cheese (or additional cheese), chives and paprika, if desired.
Bake at 375° until lightly browned on top.
Makes 10 Servings, ENJOY!

Easter Lemon Cupcakes with Lime Frosting

Ingredients:

1 box lemon cake made to directions on back
2 lemon pudding snack packs

Frosting:

1 stick of butter softened
1 8 oz. Cream cheese softened
2 1/2 c powered sugar
1/8 c lime concentrate

I made into mini cupcakes. So cute!

Chewy Granola. Yummo!

Ingredients:

4 Tbsp. Butter
1/2 c brown sugar
1/4 c honey
3 c oats
1 1/2 c of your favorite stuff
(I use 3/4c crasins and 3/4c coconut)

Mix first 3 ingredient together in sauce pan and bring to a boil and let boil for 3 mins stiring continuously. Add everything else and make sure everything is coated. Put on cookie sheet and pack down. Refriderate for 15 mins and then cut and serve.

Dad's Family Reunion

It has been thoughtfully proposed that we change the Moab reunion date from June 24 to September 9. The reasoning is that Brian's huge and always magnificent garden is expected to be most ready for harvest then, and he has invited us all to partake.  Experimenting with a September reunion instead of a June date  would give us an idea as to what we might like best.  

Some of you might have already requested time off from work or otherwise made plans around the June 24 date. So we would very much appreciate if you would, as soon as possible, tell us what you think.
